This month Paolo will lead a class on orecchiette, also known as ‘little ear pasta’. They are about as much fun as making gnocchi, but they are less finicky in humidity and will get us thinking about the coming warmer weather. As always, Jesse will pair a special glass of wine while you dine with your classmates over the final prepared dish. To complete the experience, you will receive a transposed "Italian” version of a recipe–meaning with those '“more or less” measurements we always hear about.
