Meet Gaetano Bertani, great-grandson of the mind behind Ripasso and Amarone, of Tenuta Santa Maria! He will be in house to talk about his family's love and use of Recioto and Corvina as well as their traditional, yet innovative, approach to winemaking that produced these iconic styles of wine we know today. 

Seating will occur all night long, with the daily menu designed around the wines on offer. Chef Paolo Laboa will offer classic Genovese dishes that we all know and love, but be sure to expect traditional Veneto cuisine to pepper the menu as well. Since it is not a pre-fixe menu, you are welcome to eat as much or as little as you’d like–opt for a full family style, five-course affair with a complete flight of Gaetano’s wines or eat light with one course and a glass of wine. The choice is yours!

Just in time for the spring equinox and the beginning of 2018’s growing season, we are excited to announce our second Farmer Appreciation Dinner. It will be a benefit dinner with 20% of proceeds from the evening being directed toward the Maine Organic Farmers and Growers Association (MOFGA). MOFGA has committed to using these funds for supporting the Agricultural Services program that provides in-house education and “on farm” technical assistance to farmers, gardeners and agricultural businesses to increase organic best practices and address problems such as soil fertility, disease identification, and pest prevention. The vision behind the dinner is aimed at bringing all types of folks within the food production and consumption community together to underscore the need for understanding and involvement so that our wholesome food system here in Maine can not only grow but thrive.     

Present for the evening will be many of the farmers we work with regularly, including Ian at Stonecipher, Beth from Dandelion Springs Farm, Stacy at Broadturn, Scott over at Olivia's Garden and Joe of Two Coves Farm as well as Eric Buch, the Membership and Development Director of MOFGA. All are excited to connect with you, talk about what they do and why they do it, and even share some of their favorite stories from the irrigation trenches. Also, in collaboration with Ned Swain of Devenish Wines, we will be offering an optional wine pairing flight of certified organic Italian vino by Omero Moretti of Umbria. Ned will be present to discuss Omero’s dedication to organic winemaking and the local community he supports along the way.

The affair will be a ticketed event for seating in the Main Dining Room and it will begin at 6pm. You can purchase yours here!

Coming from Colli Orientali, the finest DOC in the heart of Friuli, Marco Sara will be in house to discuss a passion for winemaking that is natural, generational and locally-dynamic. The beauty of Marco's wine comes through not just with its persistently clean, balanced and aromatic character; in fact, it shines when you remind yourself of his respect for, and incorporation of, the grapes' and vines' natural environment from growth to bottling.

As has become usual for our wine dinners, Chef Paolo will design the nightly menu around Marco's showcased wines, which include a Verduzzo table wine, two distinct styles of Friulano, a Cabernet Franc and a Verduzzo dessert wine. Opportunity for retail purchase of all but the dessert wine will be possible through Brown Trading following your meal.

You will get a glimpse into their background together back in San Francisco, at Farina, as well as learn the colorful story behind their 2008 World Pesto Championship. Beginning this February 26th, from 4-6pm, Pasta with Paolo will be open to the public on a monthly basis. The "class" will teach the ins and outs of making a various styles of pasta, as well as its history, before you create two portions of one style yourself. At 5pm, the first portion, plated and served by Paolo himself, will be enjoyed alongside a uniquely paired glass of wine in the shared company of your classmates. The second portion will be yours to take home for your own attempt at re-creation or experimentation.

This month's special dinner will fall on Tuesday, the 14th of November, in conjunction with Maine Restaurant Week's collaborative effort to reach out a hand to Puerto Rico as they recover from Hurricane Maria. We will contribute a portion of our proceeds to Hispanic Federation's Disaster Relief Fund. We will also feature a silent donation slip with options to donate for items such as our Cucina al Nudo postcard bundle, gift cards and even a few remaining signed cookbooks from Paolo and his time at Farina! ALL proceeds from these items will go to Global Giving.

Now through Thanksgiving and Giving Tuesday, this will be our drive to support local rebuilding efforts in Puerto Rico highlighted by Global Giving. You can do so at any point during your dinner in-house or using the PayPal link below. Options for purchase include the Cucina al Nudo postcard collection, which was conjured up by Paolo as the fundamental ability for chefs to have an impact through their bodies and the food they create. We will join the giving with 5% of sales going to the cause.

As an added bonus on Sunday, October 8th, we will also be hosting Andrea Cragnotti, the winemaker of Corte all Flora winery in Montepulciano, Tuscany. We invite you to join us at Solo for a community-oriented, farmer appreciation dinner. This will be a five-course affair with nothing but certified organic produce and protein directly from our partner farms. While it is still early for our full menu to be developed and disclosed, we can say that we have already secured an Island Lamb from our friends at Dandelion Springs farm. Additionally, we will feature a coursed pairing of only certified organic wines from Santa Giustina and Fasoli Gino for purchase the night of the event ($25).

MOFGA (Maine Organic Farmers and Gardeners Association) will receive 20% of all ticket sales–both food and wine–as a benefit of this event. Representatives from MOFGA and our partner farms will be present to talk about their stories and approach to the 'labor of love' that brings quality food to our tables every day. A Crush representative will also be present to talk organic wine.


Featured farms include: Dandelion Springs and Stonecipher. CSAs will be available for subscription directly through the farmer the night of the event.

Seating will be organized into groups of six to eight to encourage connection and sharing. If you have a similarly sized group that you would perfer seated as its own group, please call us directly to set up that reservation.

$85 covers dinner, tax, gratuity and benefit to MOFGA. Wine pairing is additional the night of the event.

This event will be a four-course pasta tasting menu, from appetizer to dessert. We will be featuring Pastificio Gentile Pasta for each course, established in 1876, in the city of Grangnano. Gentile uses local semolina with only a bronze cut "die"for there pasta. Alberto Zampino, the owner of Gentile and native to Grangnano, will be here for the dinner to help you understand more about how special these pastas are.

Chef Paolo will also be using Ravida Olive Oil and Sea Salt. Natalia Ravida will be in house talking about her production of olive oil in Sicily. She is a second generation olive oil maker and shares a love for cooking as well.

All the ingredients used in this dinner are imported from Rogers Collection here in Portland and distributed by Provisions International Ltd.

Cost of this dinner is $75 per person (wine pairing is available for an additional $45 the night of the event). Tax and gratuity is included in price listed.

One of the most respected winemakers in Italy, in particular because of the world class quality of his wines. The late Riccardo Falchini produced the region's finest Vernaccia di San gimignono Wines as well as top Chianti Colli Senesi and gold medal Sangiovese and Cabernet ''Super Tuscans".

San Gimignano is one of the most enchanting cities in Tuscany. It is called the "City of the Beautiful Towers".

Riccardo's sons Michael and Christopher now carry on their father's legacy. The first vineyard was planted in 1968 and are composed of some of the most favorable soil conditions inthe area.
